Mushroom Recipes

People think and talk about mushroom a lot and though they are suspicious of it, they cannot dispense with it; perhaps, there is no other food like mushroom. Mushroom cultivation has developed in recent years and thus, mushroom became something easily accessible and we began to use it in many dishes from salads to rice, from baked foods to pastas. Mushroom contains no sugar, no fat or carbs and it is 98% water. It also contains some vitamins and minerals that are good for health. However, experts advise that we shouldn’t eat more than 1 kg mushrooms in a week, because mushroom is quite hard to digest.

Turkey is very rich in regard to mushrooms with its 12.000 species compared to Europe. While choosing the mushrooms, which are hard to pick but just as pleasurable to eat, be careful to choose fresh ones, don’t store them in nylon bags and don’t wash them (for preserving their aroma). If you have to wash them, cook them immediately.

SOUP WITH PORCINI AND CHESTNUT MUSHROOMS

Ingredients
A handful of dried porcini mushrooms

1 bowl of chestnut mushrooms

1 fresh red pepper

1 long green pepper

2 tbsp. butter

2 tea glass of milk

1 tbsp. chopped dill

2 tbsp. flour

1 tsp. rock salt

6 glasses of water

DIRECTIONS
Julien the mushrooms, long green pepper and red peppers. Brown the flour with butter, then add the vegetables and water. Lastly, add milk, black pepper and rock salt. When it stars boiling, lower the heat and cook for another 15 minutes. Sprinkle dill and serve.  

MUSHROOM RISOTTO (4 servIngs)

Ingredients
1 tbsp. dried porcini mushrooms

2 tbsp. olive oil

1 onion and 2 cloves of garlic (chopped)

225 gr oyster mushrooms

350 gr risotto rice

1.2 l hot vegetable stock

2 tbsp. chopped parsley

25 gr butter, and salt, black pepper as you like

Parmesan cheese (amount optional)

DIRECTIONS
Rinse the porcini mushrooms in hot water for about 10 minutes and dry.

Heat the olive oil in a huge saucepan. Add onion and garlic. Cook for about 2-3 minutes. Add the mushrooms and cook for another 2-3 minutes. Heat the rice in olive oil in a separate pot. Slowly add the vegetable stock and mix. Continue until rice is soft and mushy. Add the cooked mushrooms to rice. Add salt, black pepper and butter, and keep stirring. Sprinkle chopped parsley and parmesan, and serve.  MUSHROOMS CASSEROLE WITH

YELLOW CHEESE  (2 SERVINGS)

Ingredients
A round casserole

200 gr cultivated mushroom

45 gr yellow cheese

15 gr butter

DIRECTIONS
Put the mushrooms in casserole. Place the butter and yellow cheese inside the mushrooms and cook in a pre-heated oven at 180oC until they’re fried.
